Ingredients:

  • 4 slices of Franconian Kent Black Pudding
  • 2 tablespoons of olive oil
  • 1 large sweet apple, cored and sliced
  • 1 small red onion, thinly sliced
  • 2 teaspoons of brown sugar
  • 1/2 teaspoon of cinnamon
  • Salt and freshly ground black pepper, to taste
  • 4 slices of crusty bread
  • 1 tablespoon of whole grain mustard
  • Mixed salad greens for garnish

Method:

  1. Cook the Black Pudding: Heat one tablespoon of olive oil in a pan over medium heat. Add the slices of Franconian Kent Black Pudding and cook for about 3-4 minutes on each side, until crisp and heated through. Remove from the pan and keep warm.
  2. Caramelise the Apples and Onions: In the same pan, add the remaining olive oil, sliced apples, and red onion. Sprinkle with brown sugar and cinnamon, and sauté until the apples and onions are caramelised and tender. Season with salt and pepper to taste.
  3. Toast the Bread: Lightly toast the slices of crusty bread until golden brown. Spread a thin layer of whole grain mustard on each slice.
  4. Assemble the Dish: Place each slice of toasted bread on a plate. Top with a slice of cooked black pudding, followed by the caramelised apple and onion mixture.
  5. Garnish and Serve: Garnish with mixed salad greens and serve immediately.
