Ingredients:
- 6 Franconian Smoked Toulouse Sausages
- 3 tablespoons of olive oil
- 1 large onion, finely chopped
- 2 carrots, diced

- 2 cans (14.5 oz each) of white beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken or vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon fresh thyme, chopped
- 2 bay leaves
- Salt and freshly ground black pepper, to taste
- Breadcrumbs for topping
- Chopped parsley, for garnish
Method:
- Brown the Sausages: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Franconian Smoked Toulouse Sausages and cook until browned on all sides. Remove and set aside.
- Sauté the Vegetables: In the same skillet, add the remaining olive oil, onion, carrots, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Combine Ingredients: Transfer the sautéed vegetables to a large casserole dish. Add the white beans, diced tomatoes, chicken or vegetable broth, tomato paste, thyme, and bay leaves. Season with salt and pepper.
- Add the Sausages: Cut the browned sausages into chunks and add them to the casserole dish. Stir to combine.
- Bake the Cassoulet: Preheat your oven to 350°F (175°C). Sprinkle breadcrumbs over the cassoulet and bake for about 1 hour, or until the top is golden brown and the cassoulet is bubbling.
