Smoked Toulouse Cassoulet Recipe: Franconian’s Rustic Touch

Ingredients:

  • 6 Franconian Smoked Toulouse Sausages
  • 3 tablespoons of olive oil
  • 1 large onion, finely chopped
  • 2 carrots, diced
  • 2 cloves of garlic, minced
  • 2 cans (14.5 oz each) of white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken or vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon fresh thyme, chopped
  • 2 bay leaves
  • Salt and freshly ground black pepper, to taste
  • Breadcrumbs for topping
  • Chopped parsley, for garnish

Method:

  1. Brown the Sausages: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Franconian Smoked Toulouse Sausages and cook until browned on all sides. Remove and set aside.
  2. Sauté the Vegetables: In the same skillet, add the remaining olive oil, onion, carrots, and garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Combine Ingredients: Transfer the sautéed vegetables to a large casserole dish. Add the white beans, diced tomatoes, chicken or vegetable broth, tomato paste, thyme, and bay leaves. Season with salt and pepper.
  4. Add the Sausages: Cut the browned sausages into chunks and add them to the casserole dish. Stir to combine.
  5. Bake the Cassoulet: Preheat your oven to 350°F (175°C). Sprinkle breadcrumbs over the cassoulet and bake for about 1 hour, or until the top is golden brown and the cassoulet is bubbling.
  6. Serve and Garnish: Remove the bay leaves. Serve the cassoulet hot, garnished with chopped parsley.
