Franconian’s Smoked Chicken Breasts: A Journey of Flavours

Ingredients:

  • 2 Franconian Smoked Chicken Breasts
  • 2 tablespoons of olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon of dried thyme
  • 1/2 teaspoon of dried rosemary
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup of white wine or chicken broth
  • 1 lemon, zest and juice
  • 1/2 cup of heavy cream
  • 2 tablespoons of freshly chopped parsley
  • Steamed vegetables and cooked rice or pasta, for serving

Method:

  1. Prepare the Chicken: Preheat your oven to 180°C (350°F). In a large oven-proof skillet, heat olive oil over medium heat. Season the Franconian Smoked Chicken Breasts with salt, pepper, thyme, and rosemary. Sear the chicken for about 2-3 minutes on each side, until golden brown.
  2. Garlic and Lemon Flavouring: Add the minced garlic to the skillet and sauté for about 30 seconds. Pour in the white wine or chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the lemon zest and juice, bringing the mixture to a simmer.
  3. Bake the Chicken: Cook the chicken in the oven for 15-20 minutes until it’s fully cooked and reaches 75°C.
  4. Creamy Finish: Remove the skillet from the oven and transfer the chicken to a plate. Over medium heat, add the heavy cream to the skillet, stirring to combine with the pan juices. Simmer for a few minutes until the sauce thickens slightly. Adjust seasoning if necessary.
  5. Serve and Garnish: Slice the chicken and serve over cooked rice, pasta, or alongside steamed vegetables. Spoon the creamy lemon sauce over the chicken and garnish with freshly chopped parsley.
