Andouille Gumbo Recipe

This recipe is a testament to our dedication to quality and culinary diversity, blending traditional Cajun cooking with our exceptional Andouille Cajun sausage. Ingredients:
- 4 Franconian Andouille Cajun Sausages, sliced into rounds
- 3 tablespoons of vegetable oil
- 1/4 cup all-purpose flour
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 4 garlic cloves, minced
- 6 cups chicken or vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 2 teaspoons Cajun seasoning
- 1/2 teaspoon dried thyme
- 2 bay leaves
- 1 cup okra, sliced (fresh or frozen)
- Salt and freshly ground black pepper, to taste
- Cooked white rice, for serving
- Chopped parsley and sliced green onions, for garnish
Method:
- Make the Roux: In a large pot, heat the vegetable oil over medium heat. Whisk in flour to create a roux, stirring continuously until it turns a deep brown colour, about 10-15 minutes.
- Sauté the Vegetables: Add the chopped onion, bell pepper, celery, and garlic to the roux. Sauté until the vegetables are tender, about 5 minutes.
- Cook the Andouille Cajun: Add the sliced Franconian Andouille Cajun sausages to the pot. Cook for another 5 minutes, allowing the flavours to meld.
- Add Broth and Seasonings: Pour in the chicken or vegetable broth, diced tomatoes, Cajun seasoning, thyme, and bay leaves. Bring the gumbo to a boil, then reduce heat and simmer for 30 minutes.
- Include Okra: Add the okra to the gumbo, and continue to simmer for an additional 15 minutes. Season with salt and pepper to taste.
- Serve and Garnish: Remove the bay leaves. Serve the gumbo over cooked white rice, garnished with chopped parsley and sliced green onions.
